Encebollado

If you are looking for traditional food, you can not miss the bolón (it can prepared with cheese, pork rinds or mixed ). The origin of this dish is unsure, however it is a traditional snack from the montuvio people. It is also known that it emerged on the Ecuadorian Coast.    

It is usually served for breakfast, accompanied by a cup of filtered coffee.

History tells us that in the coasts of Ecuador, before the wheat arrives in 1852, patacones or even the well-known green bolon was consumed, so from that time until today the consumption of this exquisite dish has been strengthened and spread.

Morocho

A special beverage to the cold nights of Guayaquil. Its unique aroma is given by spices as cinnamon, and its particular flavor is thanks to panela and milk. The morocho dates from the pre-hispanic era, with variation in the preparation way. Each ingredient has changed over time, the tastes of the colonizers greatly influenced the preparation.     

It became popular in the Guayaquil houses, about thirty years ago.

Pig sandwich

The guaiac cuisine is characterized by delicious and simple dishes. The pig sandwich is very traditional example, this is usually tasted at noon or at the end of the workday. It is prepared with different spices.  

It is prepared with rolled bread, pickled red onion and a crispy and delicate piece of leather. depending on taste, some consumers add a touch of chili pepper.
